Why are potatoes 'humble'?

Potatoes are humble because they grow in the ground. The word 'humble' comes from the Latin, 'humus,' meaning ground or soil. Presumably it is a contraction of ‘humus-able’, ‘able to dwell in the soil’. So maybe this is why Jesus tells us that it is the meek (another word for humble) who shall inherit the earth.
